How We Make Our Tallow Balm: The Slow-Infusion Process
Why Process Matters as Much as Ingredients
At Thomas Tallow Co., we believe that how you make something is just as important as what you make it from. You can start with the finest grass-fed tallow and the most carefully sourced botanicals, but if you rush the process, you lose what makes those ingredients exceptional.
That's why we use a slow-infusion method built around dry rendering. It takes longer. It requires more attention. And it produces a tallow balm that is measurably richer, more aromatic, and more bioactive than anything made with shortcuts.
Here's exactly how we do it.
Step 1: Sourcing Grass-Fed Tallow
Everything starts with the fat. We source exclusively from grass-fed cattle — animals raised on pasture, not feedlots. Grass-fed tallow contains significantly higher concentrations of conjugated linoleic acid (CLA), omega-3 fatty acids, and fat-soluble vitamins A, D, E, and K compared to conventional sources.
The raw fat arrives as suet — the dense, hard fat from around the kidneys and loins, which renders into the purest, most stable tallow available.
Step 2: Dry Rendering (Not Wet)
There are two ways to render tallow: wet and dry. We use dry rendering exclusively, and the difference matters.
Wet rendering involves simmering fat in water. It's faster and easier, but the water introduces moisture into the final product, which can reduce shelf stability, dilute the nutrient concentration, and produce a tallow with a stronger odor.
Dry rendering uses heat alone, no water. The fat is slowly melted at low temperatures in a dry vessel, allowing the moisture to evaporate naturally as the fat liquefies. This produces a cleaner, purer tallow with:
- A lighter color and more neutral scent
- Better shelf stability (no residual moisture)
- Higher concentration of fat-soluble vitamins and fatty acids
- A finer, more consistent texture when whipped
We render at low temperatures over an extended period, never rushing with high heat, which can degrade the delicate nutrients that make grass-fed tallow so valuable for skin.
Step 3: Straining and Clarifying
After rendering, we strain the liquid tallow multiple times through fine mesh to remove all solids (called cracklings), leaving a clear, golden fat.
Step 4: Botanical Selection
For our infused varieties, we select organic botanicals chosen for their skin-supportive properties, not just their scent. Every botanical we use has a functional reason to be there. No essential oils here!
Step 5: The Slow Infusion
This is the heart of our process. We combine the dry-rendered tallow with our selected botanicals and hold them together at a carefully controlled low temperature for an extended period. This allows the fat-soluble compounds in the botanicals to fully transfer into the tallow.
Fat is an exceptional carrier for botanical actives. Unlike water-based infusions, fat-soluble infusions capture a broader spectrum of the plant's beneficial compounds including the fat-soluble vitamins, antioxidants, and anti-inflammatory constituents that water simply can't extract. Dry-rendered tallow, free of residual moisture, is an especially pure and receptive base for this process.
Step 6: Straining and Cooling
After infusion, we strain the tallow through fine mesh to remove all plant material, leaving a clean, botanically-enriched fat. We then allow it to cool slowly at room temperature, no shortcuts.
Step 7: Whipping
Once cooled to the right consistency, we whip the tallow to incorporate air and create the light, fluffy texture our customers love. Whipped tallow is easier to scoop, warms faster on contact with skin, and spreads more evenly than a solid balm. Although we make both, the whipped is always a fan favorite!
Step 8: Small-Batch Filling
Every jar is filled by hand in small batches. We inspect each one before sealing. No automated lines, no mass production. Small batches mean fresher product, tighter quality control, and a product that reflects genuine craft.
